"It helps the brain tune in," smiles Christopher Mouyiassi, the newly appointed Head Chef. "Everyone gets into a rhythm, creating a focused, calm workflow. Cooking is an art form, and I want a happy, respectful environment where the team can truly focus on the craft."

This intentional, grounded approach is exactly what Christopher brings to the table as he launches his fresh summer food programme. For regional foodies across Northamptonshire and nearby Oxford, The Gallery restaurant is quickly establishing itself as a standalone culinary hotspot—blending a refined menu with spectacular, sweeping racetrack views. 

A Pedigree of Modern British & European Excellence

Christopher’s journey began at just 13 years old when he became the only boy in his school enrolled in Home Economics. That early passion sparked a decorated, globetrotting career. Following formal training and a definitive mentorship under Peter Kromberg at the Michelin-starred Le Soufflé at the InterContinental London Park Lane, Christopher sharpened his blades at some of London’s most legendary culinary landmarks. His resume reads like a map of British gastronomy: the original Le Caprice alongside Mark Hix, Coast with Stephen Terry, and The Orrery with Chris Galvin.

He then transitioned his expertise to some of the UK's most prestigious resort properties, spending ten years as Head Chef of The Stables restaurant at The Grove. From there, he moved to Luton Hoo Hotel, Golf & Spa, where he oversaw the entire culinary operation. This vast project spanned the 2 AA Rosette Wernher Restaurant, the 1 AA Rosette Adam’s Brasserie, the 19th bar, and 24 distinct event spaces, including the 400-capacity Warren Weir.

Along the way, Christopher has held multiple AA Rosettes, earned Bib Gourmands, and cooked for everyone from Hollywood royalty—including Elizabeth Taylor and Tom Cruise—to world leaders at the 2009 G20 Summit.

After years running sprawling, high-volume operations—including a seven-year tenure as Executive Chef at Luton Hoo—Christopher was eager to return to a tighter, passionate team where he could get back to pure cooking.

His culinary philosophy for The Gallery centres on a refined, modern British and European menu that prioritises depth of flavour over unnecessary fuss. He summarises the style in three words: Simple. Seasonal. Inescapable.

For the brand-new summer launch, guests won't find over-complicated plates masked by trendy foams or delicate mousses. Instead, the focus is entirely on exceptional regional ingredients, punchy flavours, and immaculate execution.

"My food has nowhere to hide," Christopher explains. "Some chefs put eight different elements onto a dish, but half of them don’t need to be there. I’d rather serve a labour-of-love tart, executed absolutely perfectly, finished with a beautiful crème fraîche and a touch of lime zest. It’s about getting maximum flavour out of great seasonal products."

The undisputed star of the new summer menu? The Whole Seabass. "It has that instant 'wow' factor," says Christopher. "It's punchy, seasonal, and simple, yet completely memorable."

Christopher’s vision for Escapade Silverstone stretches far beyond the traditional dining room. Operating a high-end property right at the heart of British motorsport comes with unique opportunities, and he treats every guest experience with equal weight.

"The restaurant itself is stunning, but there is so much more to the overall food offering here," he says. Top of his priority list is launching a relaxed, crowd-pleasing menu for the hotel's Champagne rooftop bar, alongside a clever, bespoke room service experience. The latter utilises innovative, custom packaging designed to transport high-quality, casual dishes seamlessly from the main kitchen right to Escapade Silverstone's 60 trackside buildings.
